Today, my oldest grandkiddos helped me make Scotcharoos. These treats combine the wonderful tastes of peanut butter, chocolate, and butterscotch. Scotcharoos are a family favorite and so easy to make. I’ll share our adventures here with photos until we work out the logistics of the YouTube channel the kids want me to start.

Nora measured the crisped rice cereal to make sure we had enough and then she prepared peanut butter,

while Ronan stirred the corn syrup and sugar on the stove until the sugar melted.

Meanwhile, Ilona stirred the butterscotch and chocolate chips together as they melted for the smooth topping.

When the corn syrup and sugar were ready, we added the peanut butter and Ronan whipped it together.

Then, Nora poured the peanut butter mixture onto the rice cereal and stirred it all together.

After we transferred the cereal mixture to a glass dish, Ilona poured on the melted chips and smoothed them out like frosting.

We all enjoyed a Scotcharoo for dessert after lunch and a large slab of the treats went home with the grandkiddos. Their parents were so happy since they love the yummy bars.

Yummy crisped rice treats!

Equipment

  • Large bowl
  • Small bowl
  • Sauce pan
  • 9×13 baking pan
  • Measuring cups
  • Spoons & Spatulas

Ingredients
  

  • 6 cups crisped rice cereal
  • 1 cup white sugar
  • 1 cup corn syrup
  • 1 cup peanut butter
  • 1 cup butterscotch chips
  • 1 cup chocolate chips

Instructions
 

  • Measure crisped rice cereal into a large bowl.
  • Mix white sugar and corn syrup in saucepan. Heat over medium-high heat until sugar is melted. Remove from heat and stir in peanut butter.
  • When peanut butter mixture is smooth, pour over cereal. Stir quickly to mix before the cookies start to set up.
  • Pour cookies into a baking pan and smooth evenly.
  • Put butterscotch and chocolate chips into small mixing bowl. Melt in microwave for one minute, stir to help melt, and repeat until fully melted and smooth. Spread over cookies in the bking pan.
  • Allow to cool completely before cutting and serving.
